Healthy BC Garden Recipes

Gluten Free West Coast Red Snapper with Herbs ( BC Rockfish)

West Coast Red Snapper Rockfish with Herbs

1 wild BC rockfish fillet, sliced in half

Organic ingredients:

kale
broccolini
swiss chard
bok choy
carrots
dill
tarragon
chives
garlic scapes
garlic
cubed eggplant
sliced onions
1 diced tomato
ginger
walnuts

Cook at 375 with dabbed on small pieces of grass fed butter and drizzle with olive oil. Use the gluten free crispy coating with baked walnuts below on the rockfish. Garnish with lime and lemon slices.

Gluten Free Crispy Coating with Baked Walnuts

1/4 cup chia seeds
1/4 cup ground flax seeds
1/4 cup nutritional yeast

Mix the mixture well and sprinkle on top of the fish, add chopped walnuts on top.

Variation: if desired dip the fish in scrambled egg with milk or nut milk and shake the mixture in a bag or toss in a bowl to cover well. Then bake at 375.

Summer Breeze Delight

Organic Garden Berry water

With favourite organic berries
Organic Lime
Organic mint
Organic Holy basil
Organic Lemon balm

Makes about 8 glasses. (Non-alcoholic and no sugar, no xylitol, or artificial sweeteners.)

Light Summer Quinoa Crockpot Soup with Fine Herbs

2 packages beef or marrow bones (or 4-6 litres vegetable stock)
Bring the bones to a boil and simmer in the crockpot for 24-48 hours

Add ALL organic ingredients after 48 hours or so:

1 cup organic quinoa
diced organic yam
organic carrots
organic onion
organic celery
garden organic broccolini
garden organic bok choy
garden organic tomato
shitake mushroom

Garden organic herbs (grown from seed, economical):

garden organic rosemary
garden organic dill
garden organic chives
garden organic garlic
organic salt and pepper
garden organic tarragon
garden organic parsley
1 cup organic garden basil
2 tbsp organic garden holy basil

Cook for one hour covered and serve.​

Wild caught BC lemon dill salmon & Summery BC Organic Salad

1 1/2 Organic avocado
1/2 cup defrosted organic blueberries with juice
1/2 Organic lemon slices with freshly harvested herbs:
Organic garden basil
Organic garden mint
Organic garden chives with flowers
Organic garden dill
Organic garden parsley
1 tbsp organic chia seeds
Sheep chevre or goat feta as desired
Organic Pepper to taste

Pour the blueberry juice on to the salad as dressing and enjoy! (Skip the feta and sip on matcha and lemon for weight loss.) Serve with organic lemon slices.

Venison & Organic Herbed Carrot

**Venison sausage," (grass fed) & Organic Scapes

From the garden studio patio of organic potted greens.

All-Organic BC Vancouver Island Organic Garden Salad

Organic garden: Burgundy lettuce, butter-crunch and iceberg lettuce, organic dill, mint, garden garlic scapes, basil, spearmint, chives, kale, and beet, tarragon and rosemary leaves, garlic, (cilantro if desired.)

Grass Fed-Venison and Organic Carrot

Sprinkle powdered mustard on venison sausages (2 per person, 3 for hungry ones) with organic scapes, chives, parsley, cilantro, tarragon, garlic and sprinkles of celtic sea salt.

Slice organic carrots and top with organic mint, dill and rosemary. Add lemon juice to the carrots if desired.

Drizzle with organic extra virgin olive oil. Cook at 375 until cooked through. Serve on a rectangular platter Serve on a rectangular platter with weight loss beet root juice or kale smoothie recipe.
