I have recently been composing and in August I have just completed nine new sextet tunes and arranged three past compositions with more and parts coming! As I multitasked I ended up working on three at once (or more) with plans for more in spare moments.

VEGETARIAN RECIPES
Yes I am a new vegetarian! Here is what has been on the menu lately with other tasty meal ideas for meat-eaters!
ORGANIC QUINOA TABOULI (gluten free!)
1 very large bunch of organic parsley
3 large organic garden beefsteak tomatoes
1 and 3/4 organic dried quinoa
2 cups of filtered alkaline spring water
2 small organic onions
3 organic lemons, juice of
1 handful of fresh organic garden mint
1/4 to 1/2 cup of organic extra virgin olive oil to taste
organic Celtic sea salt and organic pepper
Bring to a boil the quinoa in the 2 cups of water (preferably filtered) then simmer on the lowest setting for about 20 minutes, check the quinoa a few times to prevent any burning.
As the quinoa cooks, chop the parsley, mint tomatoes, and onions very finely. Place into a large bowl. Mix equal amounts of the squeezed lemon juice with the same amount of extra virgin olive oil, or less oil if desired.
Let the cooked quinoa cool. Mix all ingredients well, add sea salt and popper, then add the lemon juice and oil mixture and stir all the ingredients very well. To blend the flavours refrigerate the tabouli for 1-2 hours. It will taste better the longer it is in the fridge. You will eat it up fast, it's delicious!
Organic Quinoa Tabouli. Vegetarian version.
Meat option: Serve with rosemary lamb chops.
GARDEN PESTO CHICKPEA FUSILI (gluten free!)
Boil then simmer 2 cups of chickpea or vegetable fusilli pasta.
Place in a blender:
3 cups of garden freshly picked organic basil leaves
1/3 cup (or more) of fresh parmesan cheese
1/2 cup of organic walnuts or/and cashews
1/2 - 3/4 cup of organic extra virgin olive oil
Blend well. Mix with the cooked fusilli in a bowl and serve with organic garden tomatoes and organic parsley with grated or shaved parmesan on top.
